Anyone want to talk about the elephant in the room? No? Okay, I’ll do it – There haven’t been many any recipe posts around here lately. The reason? Well, there are many, but time is way up there on the list of reasons. Making a healthy and creative dinner takes time – time to research what I want to make, time to shop for the ingredients, and time to actually get home to prepare it before my kids lose their minds…due to starvation, obviously (because the last time they ate was on the car ride home from school – gasp).
Lately, I’ve been so pressed for time, I’ve fallen into my old habits of eating out, taking out, and prepackaged meals. Not the worst thing in the world, but certainly not the healthiest choice. And sometimes I even start to feel a little guilty that home cooked meals aren’t hitting my table in the evenings. But yesterday I decided it was time to eat in – you have to start somewhere, right? Unfortunately, I have so many deadlines at work this week that cooking still wasn’t a possibility, so I asked my husband to pick up a rotisserie chicken on his way home from work. From there I’d work with what I had in my pantry to try to make a healthy meal.
Once I got home, I got to work. I quickly picked some peas out of the freezer and went to the pantry to find our other side dish. As I scanned through the options, they all needed at least 20-30 minutes to cook and not one of them would be considered healthy. Until, that is, my eyes landed on the Minute Brown Rice – yes, I thought, that would be perfect! High in fiber, a whole grain, and a great source of antioxidants, brown rice is definitely a healthier choice. A choice that I wanted to feed my family. But did I have time? I’ve always heard that brown rice takes forever.
Lucky for me, Minute Brown Rice is ready in just 10 minutes, which is one-quarter of the time that it can take to make other brands of brown rice. It can be made on the stove top or in the microwave, depending on your preference. I made mine on the stove top, and although I was concerned it would wilt, it fluffed up nicely when it was done. I put the rice on the plates alongside our chicken and peas, and patted myself on the back that I had thrown together a pretty amazing dinner in about 10 minutes (the chicken reheated in the microwave in about 5 minutes and the peas took only 4 minutes). Not completely homemade, but pretty delicious. And Hazeline clapping and screeching, “Yay! Rice!” as the plates hit the table was very reassuring. Hopefully, we’ll be eating at home more in the coming weeks.
