My family has a sweet tooth. And I don’t mean a small one, I mean one that’s comparable to the size of Texas. Maybe that’s an exaggeration, but not by much. After a meal, it’s almost a given that someone is going to eagerly suggest, “What’s for dessert?”. Of course, we don’t indulge in dessert everyday, but every so often it’s nice to have a sweet ending to our meal, so I’m always on the lookout for new recipes.
A few months ago I found a recipe for an easy chocolate mousse using whipping cream, vanilla, and cocoa. I put it on my list of recipes to try, but, much to my husband’s dismay, never got around to it. And then, just this week, I saw the cartons of red, ripe, Fresh From Florida strawberries in the produce section of my local grocery store and had an idea to switch up the recipe just a bit – Strawberry Mousse!
Okay, okay, I know it’s bitter cold in so many parts of the country, but Fresh From Florida strawberries are now in season in Florida! And even if you don’t live close by, Florida farmers are making it easy for everyone to eat fresh produce year-round. Simply look for the Fresh From Florida label on your favorite food, produce, and seafood – especially the strawberries. Slice them for your morning cereal, toss a few in your kids’ lunches, and definitely try this Super Easy 3 Ingredient Strawberry Mousse!
The great thing about this recipe is how easy it is. Three ingredients. No baking. Ready in 60 minutes (or less). Need I say more? It really doesn’t get any easier than this and you might even have all the ingredients already in your house. You could even make this recipe as you’re preparing dinner and have it ready by the time you finish washing the dishes. And if your family is anything like mine, they’ll fall in love with this recipe. Here’s how to make it:
You will need:
2 16 oz cartons of Fresh From Florida Strawberries (just look for the Fresh from Florida logo when you shop)
1 1/2 cups of heavy whipping cream
1 tsp vanilla extract
Step 1 – Cut stems off one carton of strawberries and place strawberries in a blender. Puree for 2 minutes, or until smooth.
Step 2 – Cut stems off of the other carton of strawberries. Cut a few of the strawberries into smaller pieces and place at the bottom of your serving dishes. Reserve a few for garnish.
Step 3 – Place heavy whipping cream and vanilla in a medium sized mixing bowl and beat on high until soft peaks form. Place a small amount to the side to reserve for garnish.
Step 4 – Gently fold the strawberry puree into the heavy whipping cream mixture until well blended. Pour over the strawberries in the serving dish and refrigerate for one hour.
Step 5 – Garnish with reserved whipping cream and fresh strawberries. Dig in and enjoy!
