Lighter Cooking: One Pot Garlic Parmesan Chicken and Vegetables {Recipe}

Each week I sit down and put together my family’s meal plan. I’ve found that by putting together a list of recipes for us to choose from each week, we’re able to eat lighter and save money in the process. Since time was at a premium for us in March – with all 3 kids are on different sports teams and heavily involved in other activities – I relied on my instant pot, crock pot, and one pot meals like my nearly-famous One Pot Parmesan Garlic Chicken and Vegetables, made with Mazola® Corn Oil. As a busy mom, one pot meals are my favorite because they come together in minutes and clean up in a snap. But if I’m being totally honest, “my” One Pot Parmesan Garlic Chicken with Vegetables wasn’t always my recipe. It actually started as a recipe that I found on Pinterest that was filled with butter and olive oil, and served on a bed of pasta. It looked delicious, but it also looked calorie laden. Not exactly what I want my family eating at the end of a long day. But the recipe showed promise and I knew that with simple swaps, the recipe could be much lighter.

First, I removed all the olive oil and butter and replaced them with Mazola® Corn Oil. Why corn oil? Easy. Mazola® Corn Oil is a 100% pure, all-purpose cooking oil with no additives. It’s easy to use when baking, grilling, sautéing, or stir frying and has a neutral taste that won’t negatively impact the taste of my ingredients, letting the natural flavor of the food stand out. And because it has a higher smoke point, it performs well in a variety of cooking applications (once a smoke point is exceeded, it will negatively affect the flavor and nutrition of your food). Simply put, Mazola® Corn Oil is a heart-healthy choice for my family.

Second, I removed the pasta. I know, I know, I love pasta as much as the next girl, but to make this recipe guilt-free, it had to go. Instead, I replaced it with green beans and baby carrots. Serving my chicken on a bed of veggies, instead of pasta, was a very easy, lighter swap.

Finally, I used low fat Parmesan cheese. This might seem like a very small change, but I’m a huge believer that all those small changes will actually make a big difference in the end. And with a small change like this, you won’t need to sacrifice any of the taste.

The result? A delicious, easy to make meal ready in 30 minutes! My family loves this recipe so much it ends up on our meal calendar a lot and that’s just fine with me.

You will need:
4 chicken cutlets or 2 chicken breasts cut in half
4 tablespoons of Mazola® Corn Oil
1 egg
1/2 cup Italian bread crumbs
1/2 cup grated Parmesan cheese
1/4 cup flour
1/4 tsp. minced garlic
green beans
baby carrots

Step 1 – Pour 2 tablespoons of Mazola® Corn Oil into the bottom of your skillet on medium-high heat. While the oil is heating, in a small bowl beat the egg with a fork and set to the side when well beaten. Combine the breadcrumbs, cheese, and flour in another small bowl and mix until well combined.

Step 2 – Dip your chicken into the beaten egg, covering completely, and then dip it in the Parmesan breadcrumb mixture. Make sure that your chicken is completely coated before carefully placing the chicken in the bottom of the skillet.

Step 3 – Cook the chicken for 5-6 minutes on each side. Before removing from the skillet, make sure the chicken is crispy on the outside and cooked throughout (white in the middle with juices running clear). When fully cooked, place chicken on a plate to rest.

Step 4 – Pour 2 tablespoons of Mazola® Corn Oil in the bottom of the skillet with the minced garlic. Allow oil to heat before placing carrots and green beans in the skillet to cook. Saute vegetables for approximately 10 minutes.

Step 5 – Place chicken back into the skillet with the vegetables, turning the chicken often. This will allow the chicken to soak up some of that garlic flavor. Cook for approximate 4 minutes.

Step 6 – Remove chicken from the skillet and serve over a bed of vegetables. Enjoy!
