I’m so very proud of my husband. In the last few weeks he’s completely rededicated himself to being healthy. He’s eating cleaner, he’s exercising, and he’s taking his vitamins and supplements. It’s been an overall lifestyle change made in just a few weeks, but really, it hasn’t been difficult, especially considering all the Fresh From Florida produce at my local grocery store.
If your grocery store is anything like mine, you’ve seen the Fresh From Florida signs popping up all over the produce section, and maybe even noticed Fresh From Florida stickers on products themselves. They’re a sign that that your favorite fruits and veggies are made in the sunshine state by farmers who are working hard to make it easy for everyone to eat fresh produce year-round. For me, these signs and stickers have helped highlight better for us options to keep our healthier menu fresh and interesting, which is important because lack of variety has often been a huge hurdle to a healthier lifestyle in the past.
Right now, tomatoes, peppers, and blueberries are in season, so I figured it was the perfect time to whip up a summer salad. And with blueberries plentiful (and on sale!) at my local grocer, I decided the best way to top it was with a Blueberry Vinaigrette!
This salad and vinaigrette take about 5-10 minutes to make and can add some much needed color and taste to your weekly meal plan.

You will need:
2/3 cup Fresh From Florida Blueberries
1/4 honey
1/4 white vinegar
5 Tbsp extra virgin olive oil
Step 1 – Combine all ingredients in a food processor or blender and puree until smooth. This will take at least 60-90 seconds, but don’t rush it, you might need to puree for longer. You want your dressing to be completely smooth.
Step 2 – Drizzle on your favorite summer salad, full of mixed spring greens, Fresh From Florida strawberries, blueberries and oranges, and topped with walnuts or pecans. Enjoy!
