When you live in Florida there are things that you sometimes take for granted – the proximity to the beach, the ability to wear flip flops in January, and the produce. Sounds funny, doesn’t it? But really, the ability to get fresh, colorful produce year round is a luxury that I don’t even think about until my mom (who lives in a much cooler climate) suggests frozen fruit when we’re discussing a recipe. Because while other places around the country are freezing, the 47,000 farmers here in Florida are working hard to keep the produce departments plentiful so it’s easy for everyone to eat fresh produce year-round, Fresh From Florida.
So how do you know if it’s Fresh From Florida? Easy, just look for the “Fresh From Florida” logo on food, produce, and seafood at your local grocery store. When you buy those items, you know that you’re purchasing the freshest ingredients for your family’s meals, harvested by those right here in Florida.
If you’ve been to the grocery store lately, you’ve probably noticed the abundance of bell peppers, tomatoes, potatoes, and snap peas in the produce section, but that’s not all that’s available right now. Cucumbers, spinach, guava, and lettuce are also in season, with blueberries arriving soon. But above all else, my kids just love the strawberries and oranges that are available Fresh From Florida this time of year. Our favorite way to eat them? In a Fresh From Florida Flatbread Fruit Pizza, of course! If you’ve never had one, you really should try it, they are so easy to make and your kids are sure to gobble them up, slice after slice!
You will need:
Fresh From Florida Strawberries, Blueberries, and Oranges, washed and cut
4 oz. Cream Cheese, softened
2 Tbsp Lemon Greek Yogurt
1 tsp Vanilla Extract
Whole Wheat Flatbread or Nan
Honey (optional)
Step 1 – Place cream cheese, lemon Greek yogurt, and vanilla extract in a medium sized mixing bowl and beat on medium-high using a hand mixer until whipped and fluffy.
Tip: I like using lemon Greek yogurt because I think the subtle lemon taste really compliments the Fresh From Florida fruit, but if you’re not a fan of lemon, you can always substitute plain or vanilla yogurt.
Step 2 – Spread the cream cheese mixture on your flatbread. You want a thick enough layer so that you can’t see the flatbread through the cream cheese, but not too much more than that.
Step 3 – Top with your Fresh From Florida strawberries, blueberries, and orange segments, until you have a colorful fruit “pizza” that your kids will adore.To add a little touch of sweet, drizzle honey over the top.
