My kids love to bake, but I’m not going to lie, baking with my kids can be a struggle. My oldest daughter has a fairly severe allergy to raw eggs, which makes selecting a recipe tough, but besides that, my kids are just so impatient and impulsive and…messy. The idea of scrubbing my kitchen from top to bottom for hours for a recipe that might have taken 30-40 minutes is just not appealing.
But after 2 days of rain and being stuck in the house, I was willing to do just about anything to keep my kids entertained this past weekend. So I took two packages of sugar cookie mix that I’d been saving out of the pantry and tried to figure out what to do with them.
A quick survey of the cupboards yielded food gels and candy eyes, which gave me an idea – Monster Cookies!
These brightly colored, multi-eyed cookies are perfect any time of year, but especially at Halloween. I’d seen a recipe for them a while back, but it was so complex, that I skipped it. Luckily, I had cookie mixes to help short cut the process a bit.My kids just loved making them too! I actually had to keep the light on while they were in the oven because my kids wanted to watch them bake. The whole process took less than an hour, and although a few dishes were dirtied, the cookie mix definitely streamlined the process and kept clean up to a minimum. Turns out, these Monster Cookies were the perfect way to survive another rainy day!
I’m praying for some sunshine this coming weekend, but if not, I’m going to keep this recipe in my recipe book!
You will need:
2 Packages of sugar cookie mix (+ ingredients to make them)
Food gels
Candy eyes in one or two different sizes
Step 1 – Preheat oven to 375 degrees and line a cookie sheet with foil.
Step 2 – Prepare sugar cookie mix as instructed on the package and then divide up the dough into 3 different small bowls. Add food gels to each of the small bowls of dough and stir well.
Step 3 – Drop dough onto the foil lined cookie sheet. Gently press candy eyes into the top of each of the drops of dough.
Tip: Try to keep your eyes towards the middle of the cookie dough. I found that if I put the eyes too close to the edge, they would melt right off the cookie and end up a pool of melted sugar on the cookie sheet.
Step 4 – Bake cookies for 9 minutes or until you see that the edges are getting brown. I highly recommend baking these on the top rack, because any lower might brown them around the edges before they’re really done.
Step 5 – Remove from the oven and allow to cool completely before serving them to your little monsters. Enjoy!
