It’s been a while since I’ve posted a creative school lunch. Of course, it’s not that I haven’t wanted to make one, it’s just that this school year was much busier than expected. Dance, soccer, softball, scouts, and clubs kept my kids busier than ever before…which meant that I was busier than ever before. Month after month, I would plan to make a creative school lunch, only to find myself running out of time when the end of the month rolled around. But now that school’s out, I have more time. So when Nature’s Harvest® bread reached out to me to help celebrate the premier of Disney Pixar’s Finding Dory, I jumped at the chance.
Along with sending me a few coupons, they also sent me some super cute cookie cutters and a limited edition Dory TY® Sparkle Eye Beanie Boo™ plush toy (which you can get too by purchasing any four Nature’s Harvest® breads and filling out the offer form on their website). As I sat there looking at the plush Dory toy, the ideas started flooding in. I would make a Finding Dory Lunch! Not a school lunch, but a summer-y, fun ocean lunch.
As complicated as it may look initially, this lunch is actually very easy to put together and contains a ton of fruit and veggies in addition to a delicious sandwich. Below are step by step instructions so you can make this lunch for your little ones. I hope they like it as much as mine did!
You will need:
Nature’s Harvest Bread
Peanut butter
Jelly
Berries
Green beans
Midnight apricots
Pineapple
Watermelon
Baby carrots
Broccoli
American or cheddar cheese
Greek yogurt
Raisins
Pearl candy
Berry Bottom of the Sea
Start your Finding Dory lunch by creating your clam by pressing the shell cookie cutter into watermelon. Once removed from the cookie cutter top with a pearl and place it on one side of the blue plate. Wash berries and place them around the clam, at the bottom of the plate. Use 4 green beans to create grass.
Sun & Sea
Take a slice of cheese and cut a partial circle out of one of the corners and 3 strips off of the other side. Cut the 3 strips in half and arrange them on the plate as the rays of sunshine. I highly recommend doing this step with a pizza cutter, because I find it easier, but a regular knife will work as well.
As soon as you’re done with the sun, create your waves using Greek yogurt. Simply place a few spoonfuls of Greek yogurt in a ziplock bag, snip off one of the ends, and then “draw” waves as if it were a piping bag. This is actually very easy, but if you’re worried they might not come out right, you can always practice a few times on your cutting board. Just make sure you leave plenty of room for your sea creatures to keep on swimming.
And don’t throw out the extra Greek yogurt when you’re done – you’ll need it for Dory and Nemo!
Whale of a Sandwich
For my sandwich I used Nature’s Harvest Honey 7 Grain bread, because of all the Nature’s Harvest® varieties – Stone Ground 100% Whole Wheat bread, Honey Wheat Made with Whole Grain bread, Butter Wheat Made With Whole Grain bread, Honey 7 Grain bread – it’s my absolute favorite. And just like all the other varieties of Nature’s Harvest bread, it has at least 8g or more of whole grains per serving and contain no artificial flavors, colors, or high fructose corn syrup. It’s an easy choice for a whale of a sandwich!
To make the sandwich for this Finding Dory Lunch, simply use the cookie cutter to create the whale design, fill with whatever your kids like best (my younger daughter loves PB&J, but I made turkey and cheese for my older daughter), close, and top with a raisin eye and broccoli water spray.
Dory & Nemo
I made these two finned friends together, because they’re a very similar design. For Nemo, I used a baby carrot and then cut a small portion of another carrot at an angle to make a tail. I then used Greek yogurt left over for the waves, to make Nemo’s stripes along with an eye and a smile. I then added a small piece of raisin for the pupil.
For Dory, I used a midnight apricot and pineapple. If you can’t find midnight apricots, don’t worry, I’m sure plums would work just as well. Unfortunately, I couldn’t find any fin cookie cutters, so I just had to wing it here, but I think it turned out really well. After I completed the eye the same way I made Nemo’s eye, my sea was complete.
