If you’ve followed my blog for any length of time, you know we’re a football family.  High school, college, professional (sometimes even Canadian), we watch it all.  So naturally, January is month of mixed emotions for us.  Sad because it signals the end of football season, but happy because there’s so much football on television.  So much.  College bowl games, wild card games, playoff games…each weekend brings a new edge-of-your-seat game that we have to watch.  It’s fair to say my house is pretty lively each January, and this year is no exception.  And it’s all leading up to the Big Game in February.  We. Can’t. Wait.

Of course, when there’s football on television in my house, there’s also food.  Lots and lots of yummy snacks to enjoy during the game – chips, dips, finger foods, the works!  Some old recipes, some new, but each weekend more flavorful than the last.  So while I was restocking for our football watching party last weekend at Walmart, the Pace® Salsa caught my eye.  Surely, we needed more salsa.  Pace Salsa DisplayPlus, it would work perfectly in the Salsa Chicken Salad Recipe that I had planned as part of our menu.Salsa Chicken Salad Recipe

This actually used to be my go-to recipe during football season years ago, but somehow found it’s way out of the line up around the time we had kids.  Someone asked about it at a party that we had December, so I promised to bring it back.  With the playoffs in full swing, there seemed like no better time than the present.Salsa Chicken Salad with Lettuce

The great thing about this recipe is how easy it is to put together.  Six ingredients, minimal prep time, and so many ways to serve it.  Put it in a pita, wrap it in a tortilla, or serve it on it’s own.  No matter how you serve it, your guests will fall in love with the rich, creamy taste with a southwest kick.   I highly recommend this recipe if you have left over rotisserie chicken from the night before.  It also makes the perfect leftovers for lunch the next day!  Salsa Chicken SaladHere’s how you can make it –

You will need:
1/4 cup Pace® Salsa Medium
2 cups cooked chicken, chopped or shredded
1/3 cup low fat mayonnaise
2 Tbsp cilantro, chopped + extra for garnish
Salt & pepper, to tasteSalsa Chicken Salad Recipe Ingredients

Step 1 – Place Pace® Salsa, chicken, and mayonnaise in a medium sized mixing bowl and stir until well combined.  Add chicken and toss until coated.

Step 2 – Slowly add cilantro, one tablespoon at a time, stirring until well distributed.  Sprinkle with salt and pepper (to taste), then garnish with extra cilantro.Salsa Chicken Salad Recipe Instructions
