Although she seems to be a bit ahead of schedule, she’s right – the holidays are right around the corner! And while I didn’t think that she remembered much about last Thanksgiving, going around the table and talking about being thankful apparently stuck with her. It’s funny the things that you remember about holidays as a kid.
For me, the holidays were always the same. Since my parents moved out to California (far away from their families on the East Coast) before I was born, we spent the holidays with a tight knit group of friends who had become like family over the years. Our California family. There were no invitations because it was a given that we would be there. It was a delightful, familiar ritual that we did each year. Although there were occasionally new faces added to the table through birth or marriage, it was always the same house, same table, same Aunt Nell trying to get my dad to secretly top off her glass of scotch while no one was looking. And each and every time we went, my mom brought her famous green been casserole.
Everyone raved about it. Everyone. There was never any leftover to bring home with us.
A few years ago, just before my husband and I got married, we were invited to a Thanksgiving dinner at a friends house and I asked my mom how she made that green bean casserole that everyone always liked. She gave me the recipe and I’ve been bringing it to holiday gatherings ever since…but I couldn’t help putting my own spin on it. Because what isn’t better with bacon? And cheese? More please! This Easy, Cheesy Green Bean Casserole with Bacon is sure to be a hit at your holiday gathering and because the holidays tend to be more than a little hectic, it’s easy to put together, too! Ready in about 45 minutes this will be your new go-to recipe this holiday season.
You will need:
4 cups Del Monte® Green Beans with Mushrooms, drained (approximately 2 cans)
1 can Campbell’s® Cream of Mushroom Soup (10 1/2 oz.)
1 1/3 cups French’s® French Fried Onions (divided into two 2/3 cup portions)
3/4 cup milk
1/4 tsp pepper
1/2 cup mild cheddar cheese
1/2 cup + 2 Tbsp cooked, chopped bacon (or 1 package bacon pieces – not bacon bits)
Step 1 – Preheat your oven to 350 degrees.
Step 2 – In a large mixing bowl, combine soup, milk, and pepper. Whisk until only well combined.
Step 2 – Using a spoon, stir in the green beans, fried onions, and 1/2 cup bacon (keep the 2 tablespoons reserved for later). Once it’s well mixed, pour into your oven-safe serving dish and bake for 25 minutes.
Step 3 – Remove from oven and top with the remaining 2 tablespoons of bacon, cheese, and the remaining french fried onions. Bake for an additional10 minutes.
Step 4 – Remove from the oven and allow to cool before serving. Enjoy!
