After picking up a few school supplies here and there last week, I finally had the courage to pull the school supply list for my oldest daughter over the weekend. Every year I’m astounded by the sheer volume of supplies they need to go back to school, and this year is no different – markers, glue sticks, pencils, tissues, disinfecting wipes – I feel like the list goes on for miles. It’s hard to believe that a 1st grader needs all that stuff. There’s no doubt that the bags of supplies I send on the first day of school will weigh at least as much as she does. And, I haven’t even gotten Hazeline’s list…yet.
But as a mom I know that back to school is so much more than notebooks and pencils, it’s lunches and snacks and that ever elusive perfect breakfast to have in the car on the way to school, because I can barely get 3 kids reading and into the car in the morning, let alone to a breakfast table and then into the car. So as I shopped for school supplies at Walmart on Monday, I also took a quick trip down the cereal aisle and picked up Quaker Chewy Bars Chocolate Chip, Quaker Instant Oatmeal, and Cap’n Crunch Crunch Berries.
As I was unloading the groceries from the car, I happened to see the Quaker Chewy Granola Bars box I purchased and thought back to my summer bucket list. I’ve wanted to make ice pops for quite a while… What if I chopped up the granola bars and put them into ice pops, using yogurt instead of water? Maybe throw in a little fresh fruit as well? It sounded like the perfect snack for summer and maybe even back to school as well, because, lets face it, it will be quite warm here well into October and maybe even November.
I decided to make 2 different kids – Blueberry Banana with Strawberry Yogurt and Strawberry Blueberry with Vanilla Yogurt – because only my younger daughter likes bananas, but in the end my girls tried and loved both flavors.They also thought it was fun to find the chocolate chips in the yogurt pops. Before I knew it, they had devoured one and were going for more. In fact, I didn’t even have time to photograph all of them before a few went missing.
Want to make your own? It’s easy! But keep the freezer stocked, because these will go fast!
You will need:
Low fat yogurt in your choice of flavor (I used vanilla and strawberry)
Chewy Chocolate Chip Granola Bar, chopped
Fresh fruit
Ice pop mold kit
Step 1 – Spoon a small amount of yogurt in the bottom of each of the ice pop mold compartments. Layer your favorite ingredients – making sure to include lots of chopped Chewy Granola bar – and top with more yogurt. Put a stick in each of the ice pop mold compartments and place in the freezer.
Step 2 – Freeze for 5 hours. These pops might appear to be solid after just an hour or two, but I strongly recommend leaving them in for the full 5 hours or they might break as you remove them from the mold.
Step 3 – Remove from the freezer and run the bottom of the ice pop mold under warm water for 30 seconds. Gently pull on the ice pop sticks to remove them from the mold.Serve as a snack, treat, or even for breakfast! And be sure to follow Quaker on Pinterest and Facebook for more fun recipes!
