We’ve been grilling out a lot this summer. And since we don’t eat a ton of red meat, that means we’ve been eating a lot of chicken. At the beginning of the summer, I purchased a bunch of chicken in bulk, but with the amount we’ve been grilling, we ran out about 2 weeks ago. So naturally, this weeks’ Albertsons Huge Anniversary Sale ad caught my attention…because, boneless skinless chicken breast for just $1.69? How could I say no to that? That’s way cheaper per pound than my bulk purchase earlier in the summer.But when I got to Albertsons, I found that their anniversary sale was so much more than just chicken. I also found a huge selection of Pepsi, Gatorade, Lipton Tea, and tons of other products, all at great low sale prices. I can’t think of the last time I was able to find Pepsi 12 packs for 4/$10. That’s a deal!After filling my cart to the brim, I left the store with over 10 pounds of chicken…and no, that’s not a typo, 10 pounds! The only problem was, I wasn’t sure what I was going to do with it. After searching the internet for ideas, it came to me – Kabobs! I’ve been wanting to make kabobs for a while, but for some reason I never seem to have all of the ingredients. With a little help from the Albertsons anniversary sale, I now had everything I needed for kabobs with plenty of chicken left over to freeze.
Since my husband and I weren’t able to find a recipe online that was exactly what we wanted, we decided to combine the best parts of a few different recipes that we liked to create our own recipe, making sure to add in the honey for that sweet taste. The result was delicious, must make recipe that the entire family loved. My kids ate so many kabobs that I lost count. Good thing I still have time to run back to Albersons to pick up some more chicken!
You will need:
1/3 cup honey
1/3 soy sauce
1/4 cup vegetable oil
1/2 tsp ground black pepper
1 tsp minced garlic
2 lbs boneless skinless chicken breast, cubed (1 inch cubes)
2 large red bell peppers, cut into 1-2 inch pieces
1 large onion, cut into 1-2 inch pieces

Step 1 – In a large bowl, combine honey, soy sauce, vegetable oil, ground pepper, and minced garlic. Whisk until well combined. Remove a small portion of the marinade (under 1/4 cup), place in a small bowl, and refrigerate. It’s extremely important that you do this step before adding the chicken, so as to avoid contamination.
Step 2 – Place the chicken, peppers, and onion in the marinade in the large bowl. Stir so everything gets covered in marinade. Cover with plastic wrap and place in the refrigerator for at least 2 hours. Honestly, the longer the better for this step, so overnight is best, if possible. In a time crunch, 2 hours will do the trick though.
Step 3 – Soak your wooden skewers in warm water while you preheat the grill to high heat.
Step 4 – Thread chicken, bell peppers, and onion onto the soaked skewers.
Step 5 – Before placing your skewers on the grill, lightly oil the grate. Cook for 10-12 minutes, flipping them over halfway through. Double check that your chicken is cooked through and the juices run clear before removing from the grill.
Serve on a bed of rice or on their own; either way they’re sure to be a fast family favorite!
