It’s Taco Tuesday! Wait. What? You don’t celebrate Taco Tuesday in your house? Well, we certainly do! And trust me, this is a bandwagon you certainly want to jump on. In fact, we’ve celebrated Taco Tuesday each and every Tuesday this month since Cinco de Mayo, and I don’t see a stop to the festivities in the near future. They are just too delicious and something that the whole family will eat. In fact, I’m hard pressed to find another meal that my entire family will eat. Perhaps that’s why we’re so vigilant in our celebration of Taco Tuesday? Anything to avoid making dinner for us, plus an additional dinner option for the kids (that they probably still won’t eat).
But just because everyone in my house happily partakes in Taco Tuesday doesn’t mean that everyone eats their tacos the same way, because that would be far from the truth. My daughters only want soft tacos, my husband only wants crunchy tacos, and me? Well, my newest obsession is the tortilla bowl. It provides the perfect balance of crunchy and soft, while still being pretty easy to make. Because while lots of restaurants serve these same types of bowls after a long frying process, you can make these in your own home with no frying in just about 5 minutes! What to know how? I thought you would!
You will need:
Tortillas (either homemade using the IMUSA Tortilla Press or store bought)
Muffin tin
Taco filling – beef/chicken/pork, pinto/black beans, corn, salsa, cheese, lettuce, tomato, cilantro
Step 1 – Preheat oven to 425 degrees. Spray the bottom of a muffin tin with cooking spray.
Step 2 – Place the tortillas in the IMUSA Tortilla Warmer and microwave for 30 seconds on high. This will keep your tortillas warm for an hour, which should be more than enough time to make all your tortilla taco bowls. If you don’t have an IMUSA Tortilla Warmer, make sure that the tortillas are warm when you start working with them.
Step 3 – Place the warm tortillas in between the groves of the bottom of the muffin tin and bake for 4-5 minutes. Be careful not to let the edges get too brown.
Step 4 – Allow the tortilla bowl to sit for 10-15 minutes to cool.
Step 5 – Layer beans, seasoned ground beef (or chicken or pork), corn, salsa, and cheese in the tortilla bowl, along with all your other taco favorites.
