So, did you survive spring break? I did…barely. While it was only a week long, when you add in family visiting and an already busy dance/t-ball/soccer schedule that doesn’t stop for spring break, it seemed like soooo much longer. My kids’ sleep schedule was totally off. My house was torn apart. And I hardly had a moment to myself. As sad as I was to bid my mom farewell on Monday morning and send my kids back to school, I was a little relieved as I sat down with a cup of coffee and tried to figure out how to get back on schedule.
Because as much as I dreaded Greenleigh going to elementary school – mainly due to the early mornings – I’ve now come to actually enjoy my mornings. Yes, this coming from a woman who rarely said the words “good morning” because she just didn’t find anything good about the morning.
But then something changed around late September. I finally got the hang of that relentless school car line and we developed a schedule. After dropping the kids off at their respective schools, I found that I had about an hour to myself before I needed to go to work. To the average person, that may not seem like much, but, to a mom? Well, that’s a whole lot of time. And it’s all mine. I can do anything I want with that hour. Okay, so normally end up doing not so fun things like folding laundry, grocery shopping, or picking up the house…but I could do anything. A seemingly short period of time has made a huge difference in my life, to the point where I miss the hour when I don’t have it due to things like spring break. I’m already dreading summer (just a little).
So after over a week of very little “me time”, I decided to treat myself. Since I didn’t have quite enough time to make my now famous Blueberry Bundt cake, I whipped up a 2 ingredient Blueberry Angel Food Cake which is pretty darn delicious. And it happens to go perfectly with my McCafé Premium Roast coffee pods that I picked up at Walmart a few weeks ago. While I don’t drink a ton of coffee, I’ve really come to enjoy McCafé since we got our new Keurig and we’ve started experimenting with different coffee pods. Made with 100% Arabica beans, McCafé comes in 8 delicious flavors. The Premium Roast is by far my favorite, with a smooth, rich flavor and a delicious smell. Unlike so many other coffees that I’ve tried, it’s not overpowering. And don’t worry, if you don’t have a Keurig, that’s okay because McCafé comes in bags as well as pods.
If you’re looking for an easy recipe to enjoy as your reclaiming your me time from spring break, my Blueberry Angel Food Cake is pretty easy to make. And you only need 2 ingredients!
You will need:
1 box Angel Food cake mix (16 ounces)
1 can blueberry pie filling (21 ounces)
Step 1 – Preheat your oven to 325 degrees. Do NOT grease or spray your bundt or angel food pan (this allows your cake to rise, as greasing your pan may hinder your cake’s ability to climb up the sides of the pan).
Step 2 – In a medium size mixing bowl, combine angel food cake mix and blueberry pie filling using a spoon. Once well combine, pour into the ungreased bundt pan and bake in the oven for 35 – 37 minutes.
Step 3 – Remove from oven and don’t panic if your cake appears to be overflowing. This is totally normal. It’s also totally normal for your cake to fall after it’s cooled. I repeat: Don’t panic. This is exactly what is supposed to happen.And be prepared, it will fall a little more as you complete Step 4.
Step 4 – Gently run a spatula along the edges of the pan and remove angel food cake from pan.
Serve with your favorite McCafé blend and enjoy your own me time, regardless of what time of day you manage to find it!
