I can’t believe that it’s been a week since St. Patrick’s Day! How did you celebrate? Did you go to the parades? Wear a bunch of green? Devour some corned beef and cabbage? Admittedly, this year was a bit toned down for us. We read a few St. Patrick’s Day books, I managed to get 2 out of the 3 kids out the door wearing green, and I whipped up a pretty amazing St. Patrick’s Day school lunch for my oldest daughter. Since there was no way she was going to eat anything authentically Irish, I decided to get a little creative with foods we had in the house that she’d want to eat. The result was a very lucky – and very green – school lunch!
This lunch started out with a fruit rainbow made of strawberries, cantaloupe, pineapple, honeydew, and red grapes. My kids can’t seem to get enough fruit, so while it may seem like a lot, I can assure you the entire rainbow was gobbled up!
To get away from the sandwich rut I seem to find myself in all too often, I decided to make it a little more colorful using a spinach wrap. Surprisingly, my girls actually love these wraps…even if they were less than enamored with the color at first. I threw a little turkey and cheese in the middle of the shamrock, and left it up to my daughter as to whether she wanted to roll it up or eat it flat.
From there, I moved on to creating a broccoli forest for a leprechaun to hide his cheddar cheese gold coins. I ended up pouring a bit of ranch dressing at the bottom of the container holding the broccoli so my daughter could dip her broccoli florets (admittedly, broccoli can be a tough sell if there isn’t something to dip it in).
Finally, I remembered seeing green applesauce at the grocery store, but when I went to buy it, I couldn’t find it. Instead, I colored my own with a little food coloring. Be careful if you decide to do this though, because just one drop of food coloring goes a VERY long way when it comes to applesauce! The only place I advise you go crazy is the sprinkles…’cause everything is better with sprinkles! Lots of sprinkles!I even decided to layer it for a little extra fun. It may be hard to see , but the top layer is slightly brighter than the bottom layer.So how did you celebrate St. Patrick’s Day?
