Have you been watching NCAA® March Madness? We have! While we are normally more of a football family, NCAA® March Madness seems to consume our home every year around this time, and this year is no different. In fact, over the weekend, my husband and I ventured out on a date night, only to have to find a restaurant playing the games…because there was no way he was going to miss a minute of the tournament. Luckily, we were able to find a sports bar that we both liked where we could get some game day snacks, including some delicious drumettes. And then, as I sat eating more chicken than I’m willing to admit, it hit me – I’ve never made drumettes at home. Ever. Strange, right?
Since we have a lot of basketball in front of us and we’re bound to watch a few games at home, I thought it was the perfect opportunity to try and make some drumettes at home. A few months ago, I heard someone say that you could make chicken in the slow cooker using Coca-Cola, so that was my plan. And it was only cemented as I was walking through Walmart and saw a display full of Coca-Cola NCAA® Final Four Packs at the front of the store. But as I approached the display, there were more flavors than I expected – Vanilla Coke, Cherry Coke or Coke Zero. And they were all available in special Coca-Cola NCAA® Final Four Packs for just $1.25! That’s 3 4-packs for under $5! The only question left was exactly which type of Coca-Cola I was going to use in my recipe.
In the end I picked up one of each flavor (plus Original Coca-Cola!) and decided to make Cherry Coca-Cola drumettes. And then I decided to make it the easiest recipe ever by reducing it to just 3 ingredients and 2 hours in the slow cooker. They are quite possibly the easiest, tastiest drumettes you’ll ever eat!
You will need:
1 cup Cherry Coca-Cola
1/2 cup soy sauce (I used low sodium soy sauce)
12 chicken drumettesStep 1 – Place drumettes at the bottom of the slow cooker and pour Cherry Coca-Cola and soy sauce on top. Turn slow cooker on high and cook for 2 hours. Remove drumettes from slow cooker. Do NOT discard excess sauce!
Step 2 – Pour sauce from slow cooker into a medium sized sauce pan and heat over medium to high heat for approximately 15 minutes, stirring frequently. Once reduced to approximately half of the original volume, remove from heat and allow to sit for approximately 5 minutes (this will allow it to thicken a bit more).
Step 3 – Place the chicken drumettes in the sauce pan and coat them with the reduced sauce. Remove the drumettes from the sauce pan once coated and put them on your serving plate. Drizzle excess sauce over the drumettes.
Serve with carrots and bleu cheese dressing or top them with some scallions or other greens!
