If you’ve followed my blog for any length of time, you know that last year my husband and I made a decision to live a little healthier. We started walking, cooked in more, and tried to make healthier choices when we were dining out. We even tried to move to natural sweetener when we could. It was about making small, subtle changes…because, let’s face it, I struggle with big changes. Too often I mess up early in the game and then abandon the plan altogether, instead of starting back at it again.
But by making small changes, it allowed me to overlook some of the big problems and very unhealthy vices. My biggest vice? Soda. No doubt about it. I have a 2-3 can per day habit. It’s not pretty. And it’s a ton of extra sugar in my diet, which is really holding me back from being healthy.
But with 2015 and a clean slate, I’ve decided to step up our healthy lifestyle changes. This year I plan to use natural sweeteners, like Truvia, whenever possible and drastically cut back my soda addiction, substituting tea when possible. I’m cautious to call it a big change (for fear I’ll mess up and abandon the plan), but it’s definitely upping the ante when it comes to leading a healthier lifestyle. But really, this is just me catching up to my husband, because this is a change that he made months ago and he feels better after doing it. Honestly, it’s a change that’s long overdue.
Today was the first day of the switch and so far it’s going pretty well. I even paired the tea with a delicious and simple blueberry scone recipe, which was perfect because it wasn’t overly sweet and I was able to use just the smallest bit of Truvia.
You will need:
1 1/2 cups complete pancake or baking mix
1/2 cup blueberries (I used fresh, but you could probably use frozen for this recipe too)
3 packets of Truvia
4 Tbsp of milk
1 egg
1/2 tsp lemon zest
Step 1 – In a large bowl, combine the pancake mix, blueberries and Truvia. Gently stir until well combine. The purpose of this step is to make sure that the ingredients are well combined and distributed, as you won’t be able to stir it very well once the wet ingredients are added, but remember to be gentle or you’ll break open your blueberries.
Step 2 – In a small mixing bowl, whisk together the milk and egg until well blended.
Step 3 – Add milk and egg mixture to the dry ingredients in the large bowl and stir gently with a spatula. Be careful not to mash the blueberries into the sides or bottom of the mixing bowl as you stir.
Step 4 – Bake for 10 minutes, or until you see the edges and tops start to brown. Remove from oven and allow to cool.
I had to resist the urge to drizzle some glaze on these scones, but stayed firm. If you wanted to glaze them you could always whip up a quick glaze using confectioner’s sugar and lemon juice.
