Well, we’re in the home stretch…Christmas is just days away. Two days to be exact. And I don’t know about you, but I’m beyond busy. There are bags to be packed. There’s wrapping to do. And as much as I hate to admit it, I’m not 100% done with my shopping. [Gulp.] All of which has put me in search of a little caffeine boost. Okay, okay, a BIG caffeine boost. As I was walking through the grocery store in search of caffeinated options, I happened to see a coffee flavored chocolate bar. And then it came to me – Coffee Truffles!
The great thing about this recipe is that it doesn’t take a ton of ingredients and the process is actually pretty simple. Sure, you have to wait for the chocolate to set, but it’s so very worth it. Plus, it’s a great break from all the packing, wrapping, and shopping that needs to be done! These truffles are rich, sweet, and will definitely give you the boost you’re looking for. If you’re a coffee lover, or a coffee and chocolate lover, this recipe is a can’t miss. And it probably make the perfect treat for Santa when he finally makes it down the chimney in a few days!
You will need:
1/2 Cup heavy whipping cream
5 oz. Dark chocolate bar
7 oz. Coffee flavored chocolate bar
1 cup Pecans, finely crushed
2 Tbsp. Irish Cream (optional)
Step 1 – In a medium saucepan over medium heat bring heavy whipping cream to a boil.
Step 2 – Reduce heat and add 2 oz. of the Dark Chocolate and all of the Coffee flavored Chocolate and stir until smooth.
Step 3 – Remove from heat and stir in the pecans and Irish Cream. The Irish Cream is optional, but highly recommended!
Step 4 – Let cool 10 minutes then place in refrigerator at least an hour or two so the chocolate firms up.
Step 5 – Grate the remaining Dark Chocolate with a fine grater.
Step 6 – Remove the chocolate from the refrigerator and form into 1 inch balls. Roll in the grated chocolate to coat and place on wax or parchment paper. Refrigerate until ready to serve. Take out about 10 minutes before serving.
