T-fal Clipso Pressure Cooker and Zabada Review & Giveaway {And a Recipe Too!}

At the end of an average day, I have about 20-25 minutes to get dinner on the table before my kids start to lose it or it just becomes too late to make anything.  As a result, I’m always looking for ways to speed up the cooking process.  So when I was presented with the opportunity to try the T-fal Clipso Pressure Cooker, I jumped at the chance.  T-Fal Clipso Pressure CookerIf you’ve never cooked with a pressure cooker before (I hadn’t), it’s a large stock pot-sized pot with a heavy lid that clamps on to the sides of the pot.  Place the pot on your stove top, secure the lid by pressing down on the on the locking mechanism in the middle of the lid, and you’re cooking with pressure!  And since the T-fal Clipso Pressure Cooker is equipped with a stainless steel  interior and exterior, a easy one handed open/close, and a safety valve that automatically begins to work and remove steam, pressure cooking is easier and safer than ever.   The T-fal Pressure Coooker not only save time cooking, but they can also save on electricity.

Of course, there’s a bit of a learning curve when it comes to cooking with a pressure cooker.  There are things you can and can’t put in it, like milk for example.  You can’t put too much liquid in it (there are clear markers on the inside of the pot).  And when you’re done cooking your food, there are two different types of releases – the quick pressure release and the slow release.  But lucky for me, the T-fal is actually very user friendly.  Because look what I created:Chicken Enchilada Pasta Recipe In a matter of minutes I had a delicious meal whipped up.  All my food cooked quickly and evenly, and I managed to have a good, quality meal on the table before my kids lost it.  In other words, between 20-25 minutes.

Want to make this delicious dish?  It’s easy.

You will need:
1 Tbsp vegetable oil
3/4 cup diced onion
1 tsp minced garlic
1 can enchilada sauce  (19 oz.)
1 can original Rotel tomatoes (10 oz.)
1 1/4 cup water
1 package taco seasoning mix (1.25 oz)
2 large boneless skinless chicken breasts, uncooked and diced
3 cups dried rotini pasta
2 cups shredded Mexican cheese
Green onions, cilantro, and sour cream to garnish

Step 1 – Add oil to the pressure cooking pot.  Once the oil is hot, add onion and sauté until tender.  This took me somewhere between 5-7 minutes.  Add garlic and sauté for one more minute.

Step 2 – Add enchilada sauce, tomatoes, water, and taco seasoning mix to pressure cooking pot and stir until combined. Add diced chicken breasts and pasta.  Stir.

Step 3 – Cover and lock lid in place. Turn your heat to high and cook for 4 minutes.  Turn off pressure cooker and use a quick pressure release (that’s where you drop the bottom of the pot into cool water while the cap is still on).

Step 4 – Place the pot back on the stove over medium-high heat (without the lid on).  Heat and stir until the pasta is tender.  This took me about 3 minutes.

Step 5 – Turn off pressure cooker and pour pasta into a baking dish (I used an 9 inch round dish). Sprinkle the cheese on top of the pasta and broil until the cheese is melted and starting to brown.

Step 6 – Served topped with green onions, cilantro, and sour cream.  If you have some olives, they would probably be a great garnish as well.  Enjoy!

Chicken Enchilada Pasta The only bad part about this dish is that it does create a bit of a mess.  My stove top, pressure cooker, and baking dish were all in need of a scrub afterwards.  But instead of paper towel or cleaners, I used my Zabada Kitchen Handy.  With a “Grime” side to tackle sinks, benches, appliances, baking trays, pots and pans, and a “Grease” side to clean stove tops, inside your oven, range hood and pots, my Zabada Kitchen Handy was able to clean my entire kitchen after I was done cooking.  Best of all, it doesn’t require any chemicals at all, just water!  And I don’t think my kitchen or pressure cooker could have been any cleaner!
