My husband loves good, southern BBQ. In fact, when it came to the rehearsal dinner for our wedding, there was no doubt that it would be BBQ, and pulled pork – one of his favorites – had to be on the menu. But I really don’t cook much BBQ at home; he’s just too picky. And when we grill out, he’s normally the one responsible for seasoning and grilling the meat. So when I received a recipe for pulled pork from a friend, I almost automatically wrote it off. But then I saw that it was made in the crock pot, and as I scanned the lists of ingredients, it sounded delicious…and the perfect home style, comfort food recipe for the chilly weather we’re having here in Florida right now (What? Fifty degrees is chilly!).
So I loaded up my trusty crock pot and let the ingredients simmer for the day. By the time my husband arrived home from work late in the afternoon, the delicious smell coming from the crock pot had infiltrated the entire house. And when we tried them, they did not disappoint. My husband, the BBQ connoisseur had 2 helpings and left overs the next day. This recipe is a keeper! For this recipe you will need:
1 – 1 1/2 lbs pork shoulder
1 can of beer, any kind
1 1/2 cups water
1 medium size onion, diced
1/2 tsp minced garlic (or you can use a whole clove diced, I just took the short cut to make my life easier)
Salt & Pepper (to taste)
Honey
BBQ Sauce
Soft rolls for serving (I used King’s Hawaiian)
Step 1 – Place pork shoulder, fat side up in slow cooker
Step 2 – Add beer, water, onion, garlic, and salt and pepper to crock pot.
Step 3 – Drizzle honey on top of the pork shoulder, cover, and cook for 8 hours on low or 4 hours on high.
Step 4 – Remove pork shoulder from crock pot and place in a large bowl. Pull meat apart with a fork.
Step 5 – Optional – Pour a small amount of BBQ sauce in the bowl with the pulled pork and stir, coating the meat completely.
Step 6 – Serve on soft rolls and enjoy!
