Over the summer I saw a friend on Facebook share a recipe for Pumpkin Pie Croissants. It was one of those pictures with a few instructions underneath that gets liked and shared hundreds of thousands of times, but with no link or mention of where it came from, just a ton of people who swear by the recipe in the comments. The picture was mouthwatering. I wanted to make them. But, honestly, I wasn’t all that interested in pumpkin anything back in July. I figured I’d just make them in the fall – probably for Thanksgiving. I didn’t share the picture to save it to my own timeline, I just promised myself I’d remember the ingredients and the basic instructions.
Fast forward 4 months and I have absolutely no idea how to make those croissants. Less than a week before Thanksgiving, I’m trying to finalize my Thanksgiving menu and I don’t know if I can make them. Better yet, I like to do a trial run of new recipes before the big meal. But I had no recipe.
As I often do, I turned to the internet for help. My husband has Windows 8 so I decided this would be the perfect time to try out Bing Smart Search. Available on all tablets and PC’s running Windows 8.1, Bing Smart Search allows you to simply swipe, tap search, and type in what you’re looking for. No need to open a new browser window. No need to leave your current app. It’s search at your finger tips (literally) the second you want it. Before I even got halfway through the word pumpkin, results started popping up. Once I got partially through the word croissant, I had the type of results that I was looking for. Results from all over the internet, complete with mouthwatering pictures, just like the ones I saw on Facebook over the summer.
Naturally, there was more than one recipe for Pumpkin Pie Croissants. In fact, there were quite a few. I felt like I swiped through the results for a while. So I picked a recipe I liked, but adjust some of the ingredient measurements to make it a little sweeter. Here’s what I came up with —
For the croissants, you will need:
2 cans Pillsbury crescent rolls
1 can pure pumpkin
4 oz cream cheese, softened (half of a regular sized block)
4 Tsp sugar
2 tsp pumpkin pie spice
For the topping, you will need:
4 Tsp sugar
1 Tsp pumpkin pie spice
Step 1 – Preheat the oven to 375 degrees and line a cookie sheet with aluminum foil for easy clean up.
Step 2 – Open the packages of crescent rolls and separate them along the precut lines.
Step 3 – Beat the pumpkin, cream cheese, sugar, and pumpkin pie spice until well blended and smooth.
Step 4 – Spread a small spoonful of the pumpkin mixture on each of the crescent dough triangles. Roll crescent as usual.
Step 5 – Mix the ingredients for the topping in a small bowl. Before baking, place each of the crescents in the bowl and coat well. Once completely coated, place on the foil lined cookie sheet.
Step 6 – Bake for 15 minutes. Serve warm…and maybe with some vanilla ice cream? YUM!
