After a week on vacation and eating out everyday, I’ve been itching to get back to cooking in my kitchen. I know, I know – me, the person who never has time to cook. But there’s only so much take out and eating out that you can do. Plus, it’s so much healthier to cook at home. I wanted something easy to make and that the girls would eat, so it wasn’t long before I found myself in the Success Rice online recipe box. Rice is a staple in our house so I always have it on hand. The girls love it and I also love that the Success Boil-in-Bag rice cooks up in 10 minutes and other than throwing away the bag and putting the pot in the dishwasher, there’s virtually no clean up needed. That was the type of recipe that I was looking for…but I also wanted something a little different. Something I’ve never made before. Maybe something a little exotic? As I sifted through the plethora of recipes this deliciously simple Sweet & Sour Chicken recipe caught my eye. It looked pretty adventurous for a novice like me, but I figured “Why not? Let’s give it a try!”.You will need:
3 bags of Success Boil-in-Bag white rice (psst…you can get a $0.50 off coupon by clicking here)
1 1/2 lb boneless skinless chicken breast, cut into small strips
2 Tbsp vegetable oil
12 oz bottle of sweet & sour sauce
1 red pepper sliced into small strips
1 green pepper sliced into small strips
8 oz of diced fresh pineapple (you can also used the canned stuff, just drain it)
salt & pepper to taste
Step 1: Season chicken with salt and pepper.
Step 2: Pour vegetable oil into skillet and heat to medium. Once hot, place chicken in skillet to brown. This will take approximately 10-12 minutes.
Step 3: While chicken is browning, fill a separate pot (I used my small stock pot since I was making 3 bags, but I probably could have gotten away with my large sauce pan) with 3 quarts of water and place Success Rice bags inside. Turn heat to high so water will boil. Once water boils, cook for 8-10 minutes, then remove from heat, drain, and place in serving dish.And don’t worry, Success white rice (and brown rice) can sit for up to 30 minutes before being served – you have plenty of time to complete the rest of the steps and still have it hit the table perfect and ready to eat.
Step 4: Once chicken is brown add red and green peppers to skillet. Cook for 3 minutes.
Step 5: Stir in diced pineapple and sweet & sour sauce until heated throughout. Serve hot over white rice.This meal took about 20-25 minutes to cook, which makes it a great addition to our dinner recipe list. And when I say that Success Rice is foolproof, please believe me – I accidentally left my rice boiling for 12-14 minutes instead of the recommended 10 and it still came out perfect. It even sat for about 10 minutes while Erajh finished cooking the chicken, and stayed hot and delicious. But the highlight of the meal was that I didn’t have to fight the girls to eat their dinner since rice was a huge part of it. Hazeline actually had 3 helpings of rice! This is definitely on our “to make again” list, but next time I’m thinking about adding in a few sliced onions to add even more flavor. You could also add in peas, carrots, or whatever else you can think of!
Oh, and I forgot to mention, this recipe feeds 4 hungry adults and 1 toddler who can’t get enough rice.
