When I was little, my parents would take me to this one Chinese restaurant. The food was absolutely fabulous, not that my 5-year-old palette knew the difference, but I still…it was amazing. My favorite part of the meal were the mushrooms that came in this one dish that my dad always ordered. The mushrooms were sliced, sautéed, and oh so good. I don’t remember what the dish was called, but I knew that once the plate hit the table, those mushrooms were mine…and sure enough, I picked them right off his plate one by one. It was like a little agreement that we had worked out – I got the mushrooms, he got everything else. Little did I know that my parents were actually sneaking nutrition into their otherwise picky eater’s diet.
Because the fact is, there are huge health benefits to mushrooms. High in Vitamins B and D and rich in antioxidants, mushrooms are an inexpensive way to perk up any meal. Best of all, they’re always in season! But if you’re like me, you’re short on time and ideas on how to integrate mushrooms into your diet. That’s okay – The Mushroom Council is here to help! Made up of fresh-market mushroom producers and importers, the Mushroom Councils’ purpose is to promote the consumption of what else? Mushrooms! Run with that same purpose in mind, The Mushroom Channel is an online resource providing nutritional information, recipes, and even a “dining out” section spotlighting restaurants with mushroom dishes on the menu. Need an idea for a meatless main dish? The Mushroom Channel is there! Need help determining the calories for a certain mushroom? No problem! Want to know all the different types of mushrooms available and the benefits of each? It’s all there! Adding mushrooms to your menu has never been easier.
In my house, we struggle with picky eaters (funny how karma really does come around), but slowly, we’re adding mushrooms to our menu. Like, for example, this rice that my girls absolutely loved last Friday night. Check out those mushrooms – front and center.
