My good friend Liz brought this dip over to our house about a year ago, and the second I tasted it, I was in love. It’s the entire chicken wing experience (the spicy sauce, the blue cheese, and the chicken) combine into one dip and put on a chip. Ah-mazing! When I asked her for the recipe, she told me how easy it was, and said to email her for the instructions. But of course, I forgot, and my husband and I were left to dream about that tasty dip that our friend brought to our party that one time…
I had almost forgotten about it until about 2 weeks ago, when Erajh and I settled down to watch some college football. We instantly thought about that dip from a year ago. Yes, that dip would have been just perfect to eat while we watching the game. So last week I sent my friend a message and she sent me her ridiculously easy, ridiculously good Buffalo Chicken Dip recipe. She also said I could share it here on my blog!You will need:
1 package cream cheese (8 oz)
3/4 a cup Blue Cheese dressing
1 packages ready-made plain grilled chicken strips (22 oz size, found in the meat coolers)
1/3 cup Buffalo Sauce
Step 1 – Cut the chicken strips into small cubes. Or you can tear it, if you prefer.
Step 2 – Warm the cream cheese in the microwave for 30-60 seconds (this will make it easier to stir).
Step 3 – Add the blue cheese dressing to the softened cream cheese and stir.
Step 4 – Stir in the buffalo sauce and then once it’s well blended, add the cut up chicken strips
Step 5 – Put dip in the microwave on high heat for 4-5 minutes, stirring occasionally.
And there you have it – the easiest, yummiest (not a word, but if it were, it totally applies here) dip you could ever bring to a party…or eat at home by yourself. The only thing I would do next time is to decrease the amount of chicken that I used. One bag was a bit much, so I think I’ll decrease it to 1/2 a bag next time. I suppose it just a matter of personal preference. I should also say that ordinarily I don’t like Blue Cheese or Blue Cheese dressing at all, but in this dip it’s irresistible! Enjoy!
