Sweet Treats: Strawberry Dream Cookies

Towards the end of my pregnancy, I became a huge fan of all things strawberry, which is funny because as a kid, I never really liked strawberry flavored anything.  And the flavor never really grew on me…until the last month or so of my pregnancy with Everett.  Suddenly, I couldn’t get enough.  I wrote it off as a craving and didn’t think much more about it, until I was in the grocery store a couple weeks ago drooling over a strawberry cake in the display case (I ended up buying the cake).  I guess my new found love of strawberry is here to stay.

So today, as a special treat for the girls (and myself!) I decided to make some strawberry cookies.  I figured I’d enjoy the strawberry flavor while the girls would love the pink color – it was a win win.  And I decided to step it up a notch by adding in a few marshmallows and a bit of confectioners sugar.  Total time (prep + bake time) to make these cookies was less than 20 minutes and the results were just dreamy…

You will need:
Strawberry cake mix
2 eggs
1/3 cup vegetable oil
1/2 cup mini marshmallows
1/2 cup confectioners sugar

Step 1 – Preheat oven to 375 degrees and line a cookie sheet aluminum foil.

Step 2 – In a medium mixing bowl, stir cake mix, eggs, and vegetable oil until well combined.  Slowly add the mini marshmallows and stir until combine and well distributed throughout the dough.  Your dough will be stiff.

Step 3 – Take small portions of the dough in your hands and roll into balls.

Step 4 – Place your confectioners sugar in a shallow bowl.  One by one, place the balls of dough into the confectioners sugar and roll them around, coating on all sides.

Step 5 – Bake for 11 minutes or until the edges start to brown.  Remove from oven and allow to cool completely.
