How can you get your kids eating their vegetables? [Guest Post]

In order to maintain a healthy diet, we are advised to eat five portions of fruit or vegetables per day. If you sometimes find it difficult to get your kids eating their vegetables then do not worry because you’re not the only one. Even some adults don’t like eating their vegetables and most of the time that comes down to the way they are cooked.

A pile of steamed mushy spinach or some watery cabbage isn’t particularly appetizing for anyone. This is why I have come up with a few recipes which transform bland and watery veg into delicious side dishes which your kids will actually want to eat! Leek crumble
Serves 4
Wash and slice 4 leeks into bite-size chunks. Steam or microwave until just tender. Dry the leeks and place them in a bowl. In another bowl, combine a small tub of light cream cheese, a sprinkling of chives, salt, pepper and some grated cheddar cheese. Combine with the leeks and mix well before pouring into an oven-proof dish. Top with a generous helping of fresh or dried breadcrumbs. Bake in the oven until the cheese is bubbling and the breadcrumbs have turned a lovely golden color.

Potato wedges
Serves 4
Slice 2 large baking potatoes into wedges and par boil until just soft. Drain and tip the wedges onto a baking tray with some oil, salt and pepper. To create spicy wedges, sprinkle over some paprika or chili flakes. For something a little milder, sprinkle some fragrant rosemary or even chives over the potatoes. You could even combine pesto and mint to make a paste and spread it over the wedges. Bake in the oven until they’re all crispy and brown.

    You can puree different kinds and add them to spaghetti sauce too!
